Our Story

Anchored in Douglas County. Built on the block.

Since 1962, three generations of the Shepherd family have run the same promise through two shops: know your rancher, respect the animal, and cut it right.

Federal Standard

USDA EST 9246. Every cut processed and inspected to the highest federal standard, so you know exactly what you are buying.

Oregon Ranchers

We partner with Douglas County and Southern Oregon ranchers who share our commitment to humane, pasture-forward practices.

Three Generations

Over sixty years of family ownership means the knowledge of the craft is passed down in person, not out of a manual.

Cut by Hand

No box beef. Every primal comes in whole and is broken down on the block by our butchers, to order.

Where it started

A handshake with a rancher. A promise to the town.

Robert Shepherd started the business with a single rule: never put something in the case you would not be proud to serve at your own table. Sixty-plus years later, that rule still governs every decision Jacob makes — who we buy from, how we break down the animal, what goes into the smokehouse, and what we say no to.

We have watched grocery chains come and go. The reason people still drive out of their way to stand at our counter is simple: we know where the meat came from, and we know how to cut it.

Timeline

Sixty years on the block.

1962

One counter. One promise.

Founder Robert Shepherd opens a single-case meat counter in Sutherlin with a handshake deal with a local cattle rancher. Every cut broken down by hand, every price written on a chalkboard.

1988

USDA certification.

The second generation earns federal processing certification — USDA EST 9246 — unlocking wholesale channels and the ability to ship product across state lines. The smokehouse is built.

2005

Roseburg opens.

Growing demand from Douglas County restaurants pushes the family to open a second location on SE Stephens Street in Roseburg, doubling capacity and adding a full deli counter.

2019

Jacob Shepherd takes the counter.

Jacob Shepherd inherits the block and modernizes operations — online ordering, nationwide jerky shipping, and a custom-processing program for hunters and ranchers — without changing a single recipe.

USDA EST 9246

Federally inspected. Locally owned. Cutting for Douglas County since 1962.
